    • I used skinless boneless chicken breasts because they cook fast and are easy to work with. This recipe would also work well with leftover roast chicken!
    • Broccoli florets need to be cooked before adding to the Alfredo sauce but to eliminate extra dirty pots I suggest simply adding your broccoli to the pasta pot in the last 3 minutes of cooking. Then drain together and add to the sauce. You can use any vegetables you like instead of broccoli. I personally like adding asparagus or arugula to mine.
    • Use freshly grated cheese for better flavour instead of the pre-grated Parmesan. Pre-grated cheese loses flavour and dries out quickly so you get inferior product. You will also need more of it to get the same results.

    Saute the chicken until its cooked through. In a large pot of salted water, boil the fettuccine pasta. 3 minutes before the pasta reaches al dente, carefully add the fresh broccoli florets.

    Start making the sauce in a large nonstick skillet. Melt the butter in the skillet, then add in the herbs, spices, cream cheese, chicken broth, parmesan, and half and half.

    Whisk to combine the ingredients, then stir occasionally while the sauce heats. Continue heating the sauce until the cheese has melted.

    Add in the pasta and broccoli, then toss to coat them in the sauce.

    How To Make Chicken Broccoli Alfredo

    • Cook the chicken. Season both sides of the chicken cutlets with salt and pepper. Then add olive oil to a large skillet over medium-high heat. Pan-fry the chicken on both sides until fully cooked, cut it into cubes, and set it aside.
    • Saute the garlic for the alfredo. Now add the unsalted butter to the same skillet and bring the heat to medium. Add in the minced garlic cloves and stir for about 20 seconds, or until the garlic becomes fragrant.
    • Add the heavy cream and Parmesan. Next, pour in the heavy cream and let it come to a simmer. Then turn the heat off and stir in the grated Parmesan cheese.

    If you have leftovers to store, its best to cover them well ideally in an airtight container with a lid, or a food storage bag. However, you can also cover the dish tightly with foil or plastic wrap. From there, store it in your fridge for 3 to 4 days.

    To reheat, just place the desired portion in a covered saucepan or skillet over low heat, adding a splash of cream or milk if the pasta seems too dry. Heat on low, stirring occasionally, until the chicken and pasta are heated through. Avoid overcooking this when you reheat it, or the chicken will be dry.

    How To Make Broccoli Alfredo

    First, prep the chicken. I like to slice the chicken breasts in half crosswise through the middle so you end up with two thinner pieces. This way, it cooks evenly. You can also use a meat mallet to pound them to an even thickness.

    Cook the chicken in some butter until it develops a golden crust and is cooked through.

    Sauté the broccoli and garlic in the same pan you cooked the chicken in. I like to add the rest of the butter at this point, too. As it cooks, the broccoli will release some moisture which is what you want.

    Add the cream to the pan and heat it up with the broccoli. I like to simmer it for a few minutes with the broccoli. Add the Parmesan cheese and stir it all together.

    Simmer the sauce until it thickens which usually takes about five minutes or so. While it simmers cut the chicken into bite-sized pieces. Add the chicken to the sauce and give it all a stir.

    Add cooked fettuccine, toss to coat it evenly in the sauce, and dinner is ready to serve.

    Alfredo was the first recipe I learned in culinary school. No wait, second. First was fresh pasta, which then went into the sauce, which was simmering with the amazing scent of garlic on the flame.

    Either way, I suppose it was Chef Paris’ way of trying to impress us with fresh pasta. But while the egg-based pasta was rich and melt-in-your-mouth delicious, I was more into the alfredo.

    Alfredo sauce is simple: cream, butter, parmesan cheese, salt, pepper. And garlic, I love garlic. That’s optional, of course. And lemon, for brightness, but that’s a preference.

    I also use chicken broth for more flavor and to make more sauce and I love to toss in mushrooms, peas, broccoli, zucchini, all kinds of veggies. See how customizable this dish is?

    Making this dish is so simple, youll want to make it every week! And the unbeatable combo of tender fettuccine, juicy chicken breast, and creamy sauce make it a joy to serve and eat. Heres how to do just that.

  • Saute the Chicken. Brush the raw chicken breasts with olive oil and season with the garlic powder and Italian seasoning. Heat the remaining olive oil in a cast-iron pan set over medium heat. Place the seasoned chicken breasts into the heated pan, and sauté for 5-7 minutes per side or until the chicken breasts reach an internal temperature of 165°F. Remove the chicken from the pan, wrap in foil and allow it to rest for 5 minutes before slicing.
  • Make the Pasta. While the chicken cooks, boil the fettuccine according to the package directions. Make sure to use well-salted water for maximum flavor. Boil the pasta until it is al-dente, and then drain well.
  • Make the Sauce. Once noodles and chicken are cooked, melt the butter over medium-low heat in a clean saucepan. Cook the minced garlic in the butter for 1 minute. Next, slowly stir in the heavy cream, and heat until the cream is almost simmering. Turn down the heat, and then stir in the parmesan. Stir well until the cheese has melted, and then taste for salt and pepper. Adjust as needed.
