  • Sea salt + fresh cracked pepper after the soup has finished cooking, taste and adjust the seasoning to your preference. You may need to adjust upon reheating as well, since the pasta absorbs some of the liquid and flavor as it sits.

Can You Freeze Vegan Chicken Noodle Soup

Yes, you can. Let it come to room temperature, place it in a freezer-safe bag, and freeze for up to 6 months.

Its better just to freeze the broth and vegetables, so all you have to do is cook fresh noodles when you want to serve them.

To reheat, let it come to room temperature on the counter from frozen, then place in a soup pan and cookie until heated through. Then add your fresh noodles when serving.

This is a great recipe to make a double batch and then freeze the other half for a later day.

No Chicken No Noodle Soup Recipe

2 tbsp coconut aminos 1+1/2 teaspoon fish sauce2 Tablespoons lime juice2 large cloves garlic, minced1 thumb sized piece fresh ginger, grated4 tilapia loins 3 cups vegetable broth2 scallions, sliced on diagonal2 large radishes, thinly sliced1 carrot, peeled and cut into julienne slices1 zucchini spiralized, and cut into reasonable lengths1 cup chopped cilantro

Mix coconut aminos, fish sauce, lime juice, garlic, ginger, and broth in a soup pot. Warm over medium heat for ten minutes.

Add the fish and cook until it flakes apart, about another 10 minutes.

Add the scallions, radishes, and carrots and cook for 5 minutes.

Pull off the stove and add the zucchini noodles. Let stand for 5 minutes or until the zucchini has softened and is hot. Stir in most of the cilantro, reserving some for garnish.

For example, I will dice up the entire bag of celery, use what I need for this recipe and then freezer the leftovers so they are easy to grab for when Im ready to make another soup for my family.
  • Use Leftover Chicken This soup is great to make with leftover chicken. I will initially make extra chicken one night so that I can use the leftovers in this soup another night of the week!
  • Use what Herbs you have I love using thyme in this recipe but if you dont have any on hand and dont want to buy an entire bottle for this one recipe, use different herbs instead that you already have in pantry. The flavor will be a little different than in my recipe but will still be delicious! Rosemary, Oregano or Basil would all work great in this easy soup recipe.

    I first shared my Homemade Chicken Noodle Soup recipe way back in 2009, just a few months into my IGE journey, but with soup and sick season upon us I thought this would be the perfect time to re-feature it.

    If you have frozen the noodles separate from the soup, follow Method 1 above to reheat the soup. Let the noodles thaw in the water bath as well and then heat them separately in a frying pan with a teaspoon of oil.

    Once they are warmed through, add them to the pot of broth. This way, you can preserve the texture of the noodles.

    Another option is to cook fresh noodles and add them to the pot of reheated broth. Once reheated, eat the chicken noodle soup immediately.

    Chicken noodle soup is traditionally made with wide egg noodles. When youre vegan, you cant have egg noodles.

    However, a few brands out there make a wide egg noodle minus the egg.

    Walmarts store brand has one, and it works great in this soup.

    With that being said, you can use whatever noodles you would like.

    Just make sure that the noodle will not fall apart easily after being left in the warm broth for an extended amount of time.

    No one wants their noodles to disappear in their soup, or maybe you do- Im not judging.

    How Do You Make This Vegan Chicken Noodle Soup Recipe

    Start by cooking your vegan chicken strips according to the package directions.

    When done, chop up into bite-sized pieces and set aside.

    Get a large pot on medium-high heat and melt the vegan butter add the chopped onion and cook down for about 5 minutes add the rest of the vegetables, fresh garlic, seasoning, and stir.

    Add broth and water.

    Let this cook together for 15 minutes at a low boil until you start to get tender veggies.

    Add the rest of the ingredients your noodles and cooked chopped-up vegan chicken strips, bring to a simmer, and let simmer for around 10 minutes this will depend on the type of noodles you use.

    You may need to decrease this time your noodles will still cook when removed from the heat, so account for that otherwise, you will have mushy noodles.

    Giving up eating meat meant that I would have to give up chicken soup.

    Or so at least I thought.

    Hang my head, I ate a lot of Chicken and Stars.

    I know that has enough sodium for a week.

    For a creamy chicken noodle soup, add 2 to 4 tablespoons of heavy cream or half-and-half. We do this when making our creamy chicken soup.

    Add three or four slices of lime, swap the parsley for fresh cilantro, and then add diced tomatoes and cubed avocado for Mexican-style chicken soup. You can even add diced corn tortillas as we do for this tortilla chicken soup.
