Building Your Enchilada Casserole

Take your cooked and shredded chicken and add diced green chilis and onions to the meat if desired

Place a thin layer of enchilada sauce in the bottom of your pan.

Next, place a layer of tortillas to cover the entire pan. This took me 2.5 small tortillas.

Cover the tortillas with a thin layer of enchilada sauce.

Use 1/2 of your shredded chicken to create a chicken layer.

Sprinkle cheese over the top of the chicken. Optional: Place black olives on top of the cheese

Repeat steps 4-8 to create a second layer

Bake in the oven 15-30 minutes until warmed through. Cooking time will vary based upon pan size and thickness. Top with a dollop of sour cream and enjoy.

Nutritional Benefits Of Chicken:

I mentioned that despite struggling to get my kids to eat chicken, I am still trying to find new ways for them to try it. Heres why

1.Chicken is a really great source of protein. Its amino acids are essential for muscle growth and development, which is particularly important for fast growing children.

2. Chicken, and in particular chicken breast, is a very lean meat, much more so than red meats such as beef or lamb which container higher amounts of saturated fat.

3. Chicken is also a good source of B Vitamins, Vitamin D and Vitamin A.

How To Introduce Chicken Into Your Picky Eaters Meals

The trick with picky eaters is to provide exposures to foods without pressure. Some may not think of the one bite rule as pressure, but even something as polite sounding as have one bite please is telling our children to try something they arent yet ready to do so, and such rules are like a slippery slope.

Before you know it you will be saying things like, Have one bite and then you can have a cookie.

All these pressure tactics teach children to not listen to their own hunger cues or put them off trying new textures and tastes. We want them to have a healthy relationship with food and be intuitive eaters.

Instead, here is how we can talk about food at the table.

For children age 2-4 year olds describe the food, talk about how it looks, what texture to expect, the flavor and color and give easy to understand information about what the food does inside the body.

For example, you can say,

The chicken is

Color: beige/white

What it does: Chicken helps us build muscles and grow tall.

As the child grows older, you can give more detailed information about how chicken contains protein. Proteins help us repair and build muscle tissues. Eating protein at each meal helps keep us full until snack time, etc. etc.

The jist of it being, give more information about each food the child is eating, where appropriate invite the child to prep and cook with you in the kitchen and leave the decision to eat or not on the child.

Chicken Wraps Fun Recipes For Fussy Eaters And Picky Eaters

Finding a new food that a fussy eater will accept can be a challenge.

Sometimes, marrying a favourite food with a new food, supports acceptance.

Usually, small portions are better than larger ones.

In the photo I have a home-made wrap with some tinypieces of cooked chicken.

I also have a large quantity of cheese which will mask the taste and texture of the chicken. I am not advocating hiding the chicken but making it easier to eat.

If cheese is not a favourite we could use ketchup, ham, or another food that a child enjoys. Or, if its easier just with the wrap or just with the chicken that works too!

1. Be sure to chop the chicken up small. It takes a bit of time but ensures you get those small bites of chicken. Using a scissors makes this easier.

2. Dont be tempted to leave out the olive oil. It helps to make the coating super crispy and gives it that lovely golden brown colour.
