I dont know about you but when it comes to figuring out what to make for dinner, it has to be something easy. Especially if its a weeknight meal, simplicity is a must.

The idea of creating something that requires a bunch of steps or hard to come by ingredients just doesnt thrill this girl.

This is why this keto soup, is perfect for those days when you need to put something on the table quickly but it also needs to be healthy and delicious. Is that too much to ask?

Back when I had not made eating low-carb a lifestyle, I REALLY enjoyed Mexican cuisine. Homemade salsa and chips were a staple in our home, as well as other Mexican dishes. Come to think of it, I dont believe Ive ever tasted a Mexican dish I didnt enjoy.

Unfortunately, many of those yummy dishes are way too high in carbs and so they no longer fit my lifestyle. But let me be frank, this doesnt mean that I dont sometimes crave the rich bold flavors that make up this delicious cuisine.

Ive converted my fair share of Mexican dishes to be keto-friendly and I suspect that trend wont be ending any time soon. But I was craving taco soup, which is why creating a keto chicken soup that tasted like a traditional tortilla soup suddenly became a priority.

Making Chicken Taco Soup In The Slow Cooker

When I say making chicken taco soup in the crockpot is easy, I truly meant it.

Gather up all the ingredients and prepare to throw it all into the slow cooker.

And then let the slow cooker do all the work!

Start with bringing large pieces of chicken breast to the crockpot.

Add chicken to slow cooker

Then add the rest of the broth, seasoning and produce: Rotel , tomato sauce, chicken broth, black beans, corn, garlic, chili powder, cumin, paprika, Mexican oregano, and onion powder.

Add the rest of the ingredients to the slow cookerand then cook it on high for 4 hours

Once everything is in the slow cooker, cover and cook on high for 4-5 hours.

When it is done cooking, chicken should be tender and falls apart very easily.

Bring the two pieces of chicken breast onto a bowl and shred them using two forks.

Then bring shredded chicken back into the crockpot.

Give it a good stir to combine everything, add some salt and black pepper, and then there you go Slow Cooker Chicken Taco Soup in all its glorywaiting for you to eat it!

  • Chicken – boneless skinless chicken breasts
  • Taco seasoning – or one taco seasoning packet
  • Green chiles – can diced green chiles, mild or hot
  • Black beans – can black beans
  • Tomatoes – can diced tomatoes
  • Cheese – grated Mexican cheese
  • Tortilla chips – or 6 corn tortillas, cut into strips either air-fried or oven baked to crisp them up
  • Cilantro – one bunch for garnish

This deliciously comforting soup gets a lot of its thickness from the shredded cheese and chicken, once they are added to the mixture. We recommend that you shred the cheese yourself as pre-shredded cheese is coated with a preservative that hinders the cheese from melting properly.

You can add any of your favorite tex-mex flavors to this dish. While we recommend using black beans, pinto beans would work as well. You could add in some diced avocados as well, and take it to the next level! Add some cornbread on the side, and youve got an entire meal.

If you add raw corn tortilla strips to your soup, allow them to cook during the final 30 to 60 minutes to allow them to soften some and absorb the soup flavors.

  • Add Ingredients to Slow Cooker Place all the ingredients except for the cream cheese in a 6 quart crock pot.
  • Slow Cook Ingredients Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred and Stir Remove the chicken from the slow cooker. Shred the chicken and stir it into the crock pot.
  • Add Cream Cheese Stir in the cream cheese, cover and cook on low for 1 hour or on high for 30 minutes to melt the cream cheese.

  • Most any bean variety will work for this soup or you can leave them out. Ive used pinto and red kidney beans.
  • Fresh, canned or frozen corn will work.
  • Crock pot chicken tortilla soup is great to meal prep on the weekend, and then simply reheat throughout the week for easy lunches and dinners.

How To Make Slow Cooker Chicken Tortilla Soup

Basically, you are just dumping most of ingredients into the slow cooker and letting them do their thing until dinner time. Gotta love that! This mixture will cook for about 7 hours.

About an hour before you are ready to eat, remove the chicken, and shred with two forks.

Return that shredded chicken to the pot, and add the beans and corn, and give everything a good stir. Let that hang out for about another hour, or until the beans and corn are heated.

Just prior to serving, add cilantro and lime. Note: We have made this without both of those, and it is still super good!
