How To Make A Slow Cooker Chicken Thighs Meal:
Trim any excess fat from the chicken thighs and pat dry with paper towels. In a medium bowl combine the chicken thighs with paprika, salt, and pepper until evenly coated. Set aside while preparing the vegetables.
Cut all the baby potatoes in half then chop the red onion and mince the garlic.
Place the potatoes, carrots, onion, and garlic in the bottom of a 5-6 quart oval slow cooker.
Heat a pan over medium-high heat, then add the oil. When the oil is heated, brown the chicken thighs in the pan, about 3-4 minutes per side. Do not overcrowd the chicken or the chicken will steam and not brown. Cook in batches if necessary.
Place browned chicken thighs on top of the vegetables then pour in chicken broth. Cook on low for 8 hours, or high for 4 hours. Remove chicken, potatoes, and carrots from the slow cooker onto serving dishes.
Mix cornstarch and water together to make a slurry and add to the slow cooker. Turn the slow cooker on high to thicken broth into gravy. Season with salt and pepper to taste.
Serve up the chicken and drizzle with the gravy.

Pro Tip: For crispy skin, after slow cooking, place the chicken on to a baking sheet and broil for 3-5 minutes or until golden brown!
Can You Put Frozen Chicken In A Slow Cooker
I dont recommend putting frozen chicken in a slow cooker. You should always thaw chicken before slow cooking it. Frozen chicken in the slow cooker can cause problems. The main problem is the risk of bacterial growth. Frozen chicken takes longer to heat up in a slow cooker than thawed chicken meaning the frozen chicken may allow bacteria to grow while it slowly heats. Another problem can occur with frozen chicken in a slow cooker if there is not enough liquid. The frozen chicken touching the cooker may get overcooked before the interior of the chicken has finished cooking because the frozen interior takes longer to cook. You will be safer and you may get better tasting food if you thaw your chicken before placing it in a slow cooker.

The Braising Cooking Method
Braising is an essential technique that cooks more substantial cuts of meat, partially covered in a liquid in a consistent heated environment, for an extended period. Chicken thighs are chosen for this recipe because they are rich in flavor, and the increased amount of fat compared to chicken breasts keep the chicken juicy. I like bone-in pieces because it prevents the poultry from overcooking.
With a little bit of patience, the collagen in the connective tissues of the meat break down and turn into gelatin, adding flavor and body to the sauce. The slow cooker creates the ideal moist and hot environment for all of the ingredients to tenderize. The baby red potatoes, carrots slices, and corn wheels gently bubble in the fragrant garlic and herb braising liquid for a complete dinner.

For The Best Slow Cooker Lemon Chicken Make My Lemony Gravy
We impart lemony flavor into this chicken in two ways. The first way is to rub the chicken with a combination of mustard, lemon zest, herbs, and salt. After seasoning the chicken, I sear the chicken skin in a hot skillet until browned.
As I mentioned above, the searing step is not 100% necessary, but it ensures browned, delicious chicken skin when the chicken is done cooking. It also gives us the perfect opportunity to make a flavorful gravy right in the skillet.
The lemon gravy is optional, but wow is it tasty. Its easy and made directly in the pan used to sear the chicken in. By using the same pan, you get to scrape up any browned bits of chicken that got stuck on the bottom, which adds extra flavor.
To make the gravy, we whisk some of the rendered fat from searing the chicken with flour. Once the fat and flour has had a chance to cook for a minute, I pour in chicken stock and lemon juice. Then I cook the gravy until it thickens slightly. It takes a minute or two, tops. .
And thats it. Mouth-watering, tender, ultra-flavorful chicken thighs made in your slow cooker. Its honestly one of the best chicken recipes weve shared.
Tips For Slow Cooker Chicken Thighs

- This chicken stays fresh in the fridge for up to 4 days. You can enjoy these thighs as leftovers and they are a great candidate for meal prep.
