How Do You Keep A Full Chicken From Drying Out In The Oven

The best way to keep chicken from drying out is to prevent it from overcooking. Meat loses moisture as it cooks, so the chicken can taste dry and flavorless if its cooked past 165° in the white meat or 175° in the dark meat. Of course, adding moisture to the cooking process is a good way to add some insurance protection. This can be done by brining the chicken before cooking it or using a moist-heat cooking method, like a Dutch oven with the lid on.

Simple Swiss Steak In A Dutch Oven

Dutch Oven Chicken Thighs with Carrots and Potatoes

All these years I’ve thought Swiss steak was from Switzerland! It’s not. Swiss is the treatment of the steak. It’s the process of rolling or pounding the tough cut to make it tender. I’ve kept the Swissing technique and added my own flavors. It’s pretty simple. The hardest part is cutting the veggies. You can’t beat a long braise to make meat–cut-with-a-fork tender. Feel free to add your own twist! Serve it over egg noodles and with a crusty loaf of bread.

  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • salt and ground black pepper to taste
  • 2 cans Italian-style diced tomatoes, undrained
  • 1 cup beef stock
  • 3 medium s carrots, diced
  • 1 green bell pepper, diced
  • Step 1

Cut London broil into 2-inch cubes and spread out on a cutting board. Combine flour, seasoned salt, and 1/2 teaspoon pepper in a small bowl sprinkle over meat. Toss to coat.

  • Step 2

Place a sheet of plastic wrap over the steak and gently, but firmly, pound the steak with a mallet or the back of a soup ladle.

  • Step 3

Heat oil in a large Dutch oven or pot over medium-high heat. Cook and stir meat until browned, about 10 minutes. Season with salt and pepper. Add diced tomatoes with juice, beef stock, celery, onions, carrots, and bell pepper. Mix well and bring to a boil.

  • Step 4

Cover and reduce heat to low. Simmer, covered, for 1 hour, stirring occasionally. Crack the lid of the pot about 1/2 inch to let the steam escape. Continue to simmer until beef is tender, about 1 hour more.

Roasting A Whole Chicken In Your Dutch Oven

Preparing the perfect roast chicken is not rocket science. There are a few little tricks to follow which with turn the chicken more flavoursome.

First and foremost, wash the chicken thoroughly inside the chicken cavity and outside. Make sure you have removed any remnants from the chicken cavity. If you are going to marinade the chicken then place it in a bowl with the marinade. If not, then simply place the chicken in the fridge.

Secondly. make sure you remove the chicken from the fridge at least 30 minutes prior to roasting. If the chicken is cold it will be difficult to calculate roasting time. Preheat the oven at that point. The oven temperature should be 200C or 392F when you place the chicken so that it can cook faster and tastier.

There are many misconceptions with regards to stitching the chicken cavity. When there is no meat filling in the chicken cavity, then stitches with string are not advised. For example, if you add oranges and lemons in the chicken cavity, you do not need to stitch it.

A further misconception is that one needs to pierce the chicken meat at places so that it can cook better. This will apply to large pieces of meat such as lamb, pork but not chicken as the meat has a different consistency.

Moreover, there is no need to tie the wings or thighs. By doing so, volnureble areas such as joints and inside of thighs will take longer to cook. By increasing roasting time, the chicken breast will turn dry.

How To Make The Best Dutch Oven Whole Roast Chicken

First, pat dry the whole chicken completely with a paper towel before adding seasoning. This helps achieve an extra crispy skin when roasting.

Then, prepare the seasoning mixture by combining olive oil, Italian seasoning, salt and pepper in a small bowl. Generously smear the seasoning mixture over the whole chicken inside and out, including the inside cavity of the chicken.

Stuff the cavity of the chicken with half the apples, half of the onion, and half of the garlic.Next, truss the chicken by tying the chicken snugly with kitchen string so that the wings and legs stay close to the body. This helps cook the whole chicken evenly.

Then prepare the vegetables by tossing together lemon juice, 1 tablespoon melted butter, and remaining vegetables in a large mixing bowl.

Spread the vegetables evenly on the bottom of the Dutch oven and place the whole chicken on top. Make sure the breasts of the chicken face upward. Brush the outside of the chicken evenly with the remaining tablespoon of melted butter. Cover the lid and roast the chicken for 30 minutes in a preheated 400 F oven.

Remove the lid and continue to cook for another 20-25 minutes until the internal temperature reaches 165F. You can check the internal temperature by sticking a meat thermometer into the thickest part of the breast.

Pro tip: To make chicken skins extra crispy and browned, turn the broiler on to high and broil for another 3-5 minutes.
