- Carrots: Slice these up up as thick as you prefer.
- Celery: You can cut these up into larger or smaller slices, depending on your preference. My kids always like all the vegetable chopped up into tiny pieces!
- Onion: Chop this onion up into pieces that are the same size so that it cooks evenly.
- Garlic Cloves: If you donthave any fresh garlic cloves on hand then you can use minced garlic. ½ teaspoon equals about 1 clove of garlic.
- Thyme: Fresh thyme stems really add in a deep flavor to the broth.
- Salt and pepper: You only need a pinch to have these make an impact.
- Chicken broth: The chicken broth adds a lot of depth and flavor to the base of the soup.
- Egg noodles: Using egg noodles that are thick will help to soak up the broth when eating.
- Chicken: You can use leftover chicken that you have on hand. Or make it easy on yourself and grab a rotissarie chicken from the store and shred that up to put in this recipe!
- Parsley: The parsley pairs well with the thyme creating a very flavorful seasoning.

Make Ahead And Freezing Instructions:
To make ahead: This soup is best made ahead of time when you are using homemade egg noodles, since they dont get soggy and overcooked like regular store bought noodles. If you wanted to use regular noodles, I recommend making the broth first, and then boiling it with the noodles, and adding the chicken, the day of serving.
To store: Store in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken used.
To freeze: Allow the soup to cool completely and store it in a freezer safe container for 2-3 months. Thaw overnight in the fridge, or over medium heat on the stove. If using store bought noodles I would suggest undercooking the noodles before freezing the soup, to avoid them getting soggy upon reheating.

I recommend this vs. cooking your dried egg noodles or pasta in the Instant Pot. Boiling the noodles in the soup for 8-10 minutes after it has finished pressure cooking might make the vegetables soggy.

How To Make Chicken Tortilla Soup
Sauté the onion and jalapeño in an oiled Dutch oven, then add the diced garlic and continue cooking until fragrant. Add the chicken broth, tomatoes and juice, black beans, chicken, corn, lime juice, spices and bring to a boil.
Let the mixture boil for 5 minutes, then stir in fresh cilantro and boil another minute.
Ladle the homemade chicken tortilla soup into bowls and top with homemade tortilla strips , cubed avocado, shredded cheese, and/or sour cream.
How To Make Classic Chicken Noodle Soup With Homemade Noodles
- In your favorite soup pot, saute onion, carrot, and celery in butter until fragrant. Salt and pepper while sauteing.
- Add chicken broth or stock, chicken, and 1-2 cups of water. Bring to a boil.
- If chicken is put in raw or frozen, allow soup to boil for 5-10 minutes before adding the noodles.
- Next, add noodles to boiling water and cook for 10-15 minutes.
- Add 1/2 tsp lemon juice and 1-2 tbsp parsley flakes if desired.
- Taste broth and adjust seasoning if needed. If soup needs more flavor, add salt, pepper, or chicken bullion. If the soup is too strong, add water.
Tips for Making Classic Chicken Noodle Soup with Homemade Noodles
- I like to keep pre-cooked chicken in my freezer and use it in soups. If I dont have any, I just cut up a chicken breast and put it in when the water is boiling and make sure it boils for 15-20 minutes.
- You can use frozen chicken breasts in this recipe. Add them to the boiling water and boil for 20-30 minutes. Then, take the chicken out, shred it, and put it back in the soup.
- While the soup is coming to a boil, make the Homemade Noodles.
- Sometimes I throw in a handful of peas or frozen broccoli at the end to add more veggies.

Last week, I kicked off my month of soups, with this Homemade Lasagna Soup Recipe. Today they are calling for snow through these parts and nothing makes me crave a warm cup of soup more than cold weather and snowflakes. That means it is a perfect time to share this comfort food classic for Crockpot Chicken Noodle Soup.
Ive made The Pioneer Womans Chicken Noodle Soup for years and it is a hard one to beat, but it does take quite a bit of time to pull together, where as this slow cooker recipe is a set and forget blessing.
Simply place a couple chicken breasts in the bottom of a slow cooker. Along with any sort of vegetables you like.
Diced onion, celery, and carrots are a great option.
Top with a can of cream of chicken soup, butter, chicken broth, and seasonings.
Set the slow cooker to low for about 5-6 hours.
