Uneven Grillingthe Secret To Grilled Thighs
Uneven grilling is my method to avoid both flare-ups from draining fat and burnt skin.
There are two parts to this method:1) The skin side of the thighs can burn easily so should have less time facing the flames. So with skin-on thighs, start with skin up for the first period and grill for about 5-6 minutes. Flip to skin side down for 4 minutes. Continue to go back and forth using the same timing.2) Alternate sides of the grill surface with each flip. You will get fat drainage flare-ups. Moving the chicken to the other side of the grill at the flips will allow hot spots from fat drainage to burn out.
For skinless thighs, you can skip the uneven grilling timesyou have no chicken skin you are trying to protect. But you will still need a large surface area to move around and avoid flare-ups from the fat drainage.
Are Chicken Thighs Healthy
The short answer is yes! Chicken thighs are just as healthy as the breasts and other cuts of meat. They are dark meat and dark meat contains healthy monounsaturated fats which are good for your heart.
The skin is unhealthy though on any cut of chicken so if youre worried about eating the healthiest cuts of chicken, skip the skin and you should be good no matter what you choose.
How To Grill Chicken Thighs: Preparation
Once the chicken has marinated for at least 30 minutes, it’s time to prep it for the grill. One of the essential steps to grilling the perfect chicken is to let it rise to room temperature.
When chicken is marinating, it should always be refrigerated, so it doesn’t spoil. That cold chicken needs to be laid out flat, patted down with paper towels, and allowed to rise to room temperature. This will help the different pieces cook more uniformly and quickly on the grill.

What Is Grilled Chicken Thighs
Grilled chicken thighs are pieces of meat that are cut from the legs and thighs of a chicken. They are most commonly eaten in sandwiches, wraps, or stuffed in a pita. Chicken thighs can be seasoned differently. In this article we will focus on two basic ways to grill them: grilling them on skewers and grilling them over indirect heat however, many other techniques exist and can be used .
How To Grill Chicken Thighs:
To start, grab a medium sized bowl and whisk together your marinade. This consists of olive oil, lemon juice, lime juice, garlic, onion powder, salt, pepper, mustard, soy sauce, dijon mustard, and brown sugar. Pantry staples! Trim any fat from your chicken thighs if necessary, and place in a large bowl or a large zip-top plastic bag. Pour the marinade over the chicken.
This recipe calls for 2-2.5 pounds of chicken thighs, or about 8 total. As you can see from the photos, you will want to use bone-in and skin on chicken thighs for best results with this recipe. After you have poured your marinade over the chicken, seal the bag, getting out as much air as you can. Now, massage the meat inside the bag to make sure all of the chicken is well coated. Marinate in the refrigerator for at least 30 minutes, and up to 12 hours. For best flavor, I prefer marinating for at least 2 hours, but a shorter time will work in a pinch. Once the chicken has marinated, allow it to sit, covered in the bag at room temperature for 15-20 minutes while your grill heats up. Grill the chicken as directed in the recipe card below for charcoal or gas!
Enjoy!

What You Will Need
- Chicken Thighs: either boneless or bone-in will work and we have included instructions for both!
- Seasoning: you can either use a classic salt and pepper seasoning OR you can use a fun chicken seasoning .
- Dipping Sauce : you definitely dont need a dipping sauce, but sometimes we like to use a little simple mustard mayo sauce to dip our grilled chicken thighs in!
Should Chicken Be At Room Temperature Before Grilling
You dont want the raw meat to sit at room temperature for an extended time. Bacteria multiply rapidly, especially in the temperature danger zone between 40 to 140°F . They can double in as little as 20 minutes, be careful on those hot summer days! Never leave food out of refrigeration for over 2 hours, or it could cause food spoilage or illness. However, its okay to let it sit at room temperature for no more than 15 minutes while preheating the grill to take the chill out of the chicken for even more cooking.

It is also the temperature at which most of the moisture has evaporated from the meat.
The meat will be tender, juicy, and juicy-smelling. If you want to make sure your chicken is cooked to the right temperature, you can use the Instant-Read or Meat Thermometer app on your phone or tablet to check the final temperatures of your food.

Setting Up The Gas Grill
If you are going to use the gas grill this summer and have stored the appliance somewhere far, it is imperative to clean it before use. Ensure that the cooking grates are clean because rust in the grates and residue of previous grilling adventures can affect the food you are about to cook.
An essential aspect of grilling all foods is the temperature you grill the food at. The time the meal takes to grill invariably depends on the temperature you have set for heating it.
Like all other barbecue items, it is crucial to adjust the temperatures according to the needs of the chicken thighs. To make the perfect grilled chicken thighs, make sure that you have set the gas grill at medium-high flame this will give you a temperature within the 350 to 400 °F range.
Some grills are more comfortable to control than others, with outdoor temperatures playing a role as well. However, keep in mind that the average temperature required for pre-heating the gas grill is 350-400 °F this is regardless of grill type and the ease of use.
How Long Should You Grill Boneless Skinless Chicken Thighs

My favorite boneless grilled chicken thighs recipe begins by bringing the grill to around 400 degrees, which is medium-high heat.
After the grill reaches the desired temperature, sprinkle the chicken with salt and pepper, then grill each side for 3 to 4 minutes.
The next step is to flip the meat and grill the other side. Remove the grilled chicken thigh when the internal temperature reaches 165 degrees.
Let the meat rest for about 5 minutes before serving . It will help the juices in the boneless chicken thighs redistribute nicely. By following these guidelines, you will end up with tasty meat worth 5 stars.
Note: You can also grill the meat on a charcoal grill. In this case, position the hot coals on one side, and leave the other side empty.

The Benefits Of Grilling Chicken Thighs
Chicken thighs get a bad rap because they have more fat than chicken breasts. However, this extra fat means that they are juicier and more flavorful when cooked correctly. Chicken thighs are cheaper than chicken breasts, making them an excellent option for budget-minded cooks.
Grilling chicken thighs allows that extra fat to render and burn away, leaving juicy, flavorful meat. If you have ever baked chicken thighs in the oven, they often come out greasy and slightly rubbery because of all the fat. On the grill, that fat drips away, leaving a texture and flavor that is addicting and delicious.
Since much of the fat drips away, grilling chicken thighs is healthier than frying chicken in a pan. The grill’s high heat also helps to crisp up the skin while keeping the meat juicy on the inside.
The texture of grilled chicken thighs is also amazing. The slightly crisp skin and juicy meat make them perfect for any meal. I love to serve grilled chicken thighs with a simple salad or roasted vegetables for a healthy and delicious dinner.
Why Chicken Thighs Are A Better Option Than Chicken Breasts
Chicken thighs are an excellent option for grilling because they are full of flavor. They also tend to be juicier than chicken breasts, so you don’t have to worry about them drying out on the grill. Chicken thighs are also a cheaper option than chicken breasts, so they are a great choice if you are on a budget.
