One solution is to slice it lengthwise to produce two flatter chicken cutlets. This is far easier than trying to pound a chicken breast flat with a meat mallet, which will mash it to a pulp.

I prefer to use fresh shredded mozzarella cheese for this recipe, and for most of my recipes. Pre-shredded packet cheese never seems to give the same result as fresh mozzarella. You can use either one, its just personal preference.
