Which Is Better Dry Rub Or Marinade

When it comes to grilling, both dry rubbing and marinating can work pretty well. But both of them have their own pros and cons.

A marinate, unlike a dry rub, is more liquidy. Spices, herbs, and other flavorings are used, but with a liquid acidic base such as sauces and vinegar. Therefore, its acidity has a higher capacity to tenderize more soft meat like chicken .

Conversely, a dry rub usually makes a coating around the piece of meat, sealing the juiciness. And, it does not give so much moisture to the surface of the meat as a marinade would do.

In addition, the sugar added in most dry rubs gives a more caramelized effect to chicken, which a marinade typically doesnt provide. In fact, a dry rub simply gives so much flavor within a short time and without requiring much dilution.

Depending on the thickness of your chicken, allow about 15-20 minutes to grill boneless chicken breasts. Cook the chicken over direct heat for the first 10 minutes or until nicely seared then move to the indirect heat for another 5-10 minutes depending on its thickness.

Cook until the chickens internal temp is 165° F, or juices run clear. In testing the chicken breasts for internal temperature, slide the thermometer laterally at one end, so it hits the center of the piece. Be careful not to overcook the grilled chicken, otherwise itll become tough and rubbery.

Give it a rest. Once the grilled chicken breasts are cooked, transfer to a plate and tent with aluminum foil to allow the juices to rest for about 5 minutes. Cutting the chicken too early will cause the juices to run out and it wont be as juicy.

    Chicken Seasoning Recipe Ingredients

    • Brown Sugar: The brown sugar helps to caramelize the outside of the chicken, which makes it especially juicy and flavorful. It also adds a touch of sweetness, which my family thinks is delicious. If you prefer a seasoning without sugar, you can omit the brown sugar.
    • Paprika: You can use sweet paprika or smoked paprika, depending on your flavor preferences. Smoked paprika will lend a smoky flavor.
    • Dried Oregano: Or try Italian seasoning, which is also delicious in this recipe.
    • Garlic Powder: For flavor.
    • Onion Powder: For flavor.
    • Salt: I always err on the side of using less salt to keep my recipes on the healthy side. You can adjust the amount of salt to your tastes and dietary needs.
    • Black Pepper: Freshly ground black pepper will give you the best flavor. You can buy an inexpensive pepper grinder with whole peppercorns at most grocery stores.
    • Cayenne Pepper: For a bit of heat. Were using a small amount, so that the chicken wont be too spicy.

    Recipe Variation:

    • You can add 2 teaspoons of chili powder to this recipe for a bit of Tex-Mex flavor.

    Oil The Chicken Before Grilling

Before adding the chicken to the grill, rub it with cooking oil. Use a high smoke point oil that has a neutral taste. I prefer olive oil or avocado oil. This process helps prevent sticking to the grill. The oil also dissolves and releases more fat-soluble flavor compounds in the seasoning for better tasting meat.

Oil also provides a protective layer on the dried spices to reduce the amount of burning. You only need about ½ to 1 teaspoon of oil per side.

What To Serve With Grilled Chicken

Grilled chicken is a healthy, delicious main course to serve by itself-but there are tons of ways to dress it up, too. You can put grilled chicken in just about anything: sliced on top of salads, stuffed into sandwiches, shredded for chicken soups or skewered on a kabob. Or top the dish off with a heaping pile of grilled veggies and youve got yourself dinner!

    • Mix the spices together for the seasoning mix well and use a whisk to mix them up. This removes lumps and combines the spices evenly for easy spreading.
    • If you plan to grill or roast your chicken, mix up the spices, apply a light coat of vegetable oil and then apply the seasoning.
    • You can wash your pieces of chicken if you prefer, however, make sure they are very dry before you try to apply the spices. It may seem like the wetness will help the spices to stick, but the extra water will lead to steam during cooking and that will wash the spices right off.
    • Prior to cooking your chicken, youll want to dry the chicken well, apply a good sprinkle of KOSHER salt . This adds flavor and pulls some of the surface water out of the chicken giving it great flavor! Dry the chicken again before you put the seasoning on.

How To Grill Chicken Breasts And Thighs

It’s tough to say exactly how long to cook chicken breasts and thighs, since it totally depends on their size, whether they have skin on or bones in, and the type of grill you’re using. Consider this a general rule of thumb, but tweak it based on the cuts of chicken and grilling equipment that you’re working with:

  • Beginning with a clean, greased grill, sear seasoned chicken skin side down over direct, high heat for about 3 minutes, or until it has developed a golden crust.
  • Flip over and transfer the meat to the indirect area, and cook until an instant-read thermometer in the thickest part reads 165. Start checking for doneness after 10 to 15 minutes, depending on the size of the cut.
  • Let rest for 10 minutes.

    The Best Grilled Chicken

Say goodbye to dry, bland grilled chicken breasts. This recipe guarantees juicy, flavorful chicken every time.

Sometimes in cooking the simplest dishes are the hardest to get right, and grilled chicken is a perfect example. Because boneless chicken breasts are so lean, they often turn out dry, rubbery, and bland. Contrary to popular belief, marinating alone will not save grilled chicken from drying out in fact, its often the marinade that causes the problem!

My technique and marinade ensure tender, juicy, and flavorful grilled chicken every time. You can serve the fillets on their own as a healthy main course , topped with cheese on a toasted bun, or, as I often do, sliced over a Caesar salad. Bonus: the recipe is quick and easy. You do all of the prep ahead of time and you wont even dirty a single bowl.

    Grill And Chicken Temperature

    Grilled Chicken Recipe

Grill the chicken on medium heat. I have a gas grill with Grill Grates so it is easy to check the temperature with a laser thermometer. I grilled these at 450°.

If you use a charcoal grill, let the coals burn down a bit so they are not super hot. If you do a lot of grilling, you know how to use your charcoal grill.

At 450°, I grilled each side for 4 minutes. The internal temperature was 150° when I removed them from the grill. Put the breasts on a plate and cover with aluminum foil for 5 to 10 minutes. They will continue to cook a bit and retain their juices.

The U.S. FDA, , recommends that chicken be cooked to 165°. Thats a good temperature for legs and thighs, but Ive always been a rebel when it comes to white meat. The chicken will be a bit more tender and juicy at 150°. Use your own discretion about the temperature.

Serve the chicken with a big spoonful of the salsa on top and then drizzle with some Good balsamic vinegar. Aged balsamic is the best, but some 50 year old vinegar is $20.00 an ounce. I have pretty good balsamic that was $20.00 for 8 ounces. Use what you can afford.
