Crock Pot Mexican Chicken Soup:
This tasty soup has everything for a great dinner in the crock pot. It is the perfect blend of heat while not being so spicy that the kids canât enjoy it. The tomatoes and veggies stretch the meat for the perfect budget friendly meal.
You can use chicken breast or chicken thighs with this recipe. Both cook perfectly in the slow cooker. Cook time will vary.
Slow Cooker Crack Chicken

Making crack chicken in the slow cooker is so easy! All you have to do is add skinless chicken thighs to your slow cooker and add your ranch seasoning. Toss the chicken in the seasoning to cover.
Top the chicken with the cream cheese, cover and cook for 3 hours on the HIGH setting or 7 hours on LOW.
Shred the chicken using two forks and mix it with the creamy sauce.
Top with shredded cheese and finely chopped crisp bacon. I used a cheese blend that included cheddar, emmental and monterey jack cheese. Cover the crockpot and continue to cook on HIGH for 15 minutes or until the cheese has melted.
Remove the inner pot from the slow cooker (otherwise your crack chicken will continue to cook and may become dry. Top with the chopped chives and serve!
Notes On Crock Pot Bacon Broccoli Chicken
- We used our casserole crock to make this yummy dish. We love how it evenly cooks the tenders and makes dividing into portions a snap!
- If you desire a smoother sauce, whip cream cheese with dip mix in a mixer. Then slather on top instead of step 2 and 3. I prefer the convenience of not getting mixer out and find that mixing at the end is good enough for me.

What Chicken Is Best In This Recipe
The best chicken to use when making keto crack chicken should be boneless breasts or boneless thighs, BONELESS being the keyword here. You dont want to use any chicken that has bones, its way too much work to get all the bones out after its cooked.
You also could use leftover cooked chicken or even a rotisserie chicken. However, keep in mind you wont need to cook it for nearly as long because you are starting with pre-cooked chicken.
Instead, you will want to cook it just long enough to melt the cream cheese and cheddar cheese making it nice and gooey.

Crock Pot Ranch Chicken is an excellent candidate for a dump type dish. With just four ingredients it almost makes itself.
As you can see from the picture above, all you have to do is place the chicken in the bottom of the pot, then add the butter and cream cheese. Lastly, sprinkle the ranch dressing over the top and cover with the lid.

Did I mention you can use frozen chicken breasts? Just add up to an hour to the cooking time.
I always cut into the breasts to make certain they are no longer pink inside and that the juices are running clear before I shred them.

I know some people are worried that because there isnt any liquid added to the crockpot that it will be dry, but its not at all. Every time I have made this low carb crack chicken recipe, its been super creamy!
The steam from the crock pot adds enough liquid to the pan, I have not found it necessary at all to add any extra.

- Since this recipe uses chicken breasts, I do not recommend letting it sit on the WARM setting for too long after cook time has completed.
- I like to have extra shredded mozzarella cheese around to not only use as garnish but to top the leftover chicken when reheating. Chicken breasts are easy to overcook, especially when re-heating.

When our family went keto, my traditional chili recipe needed a low carb diet makeover too.
