How to Make Homemade Chicken Soup |

Step One: Combine all soup ingredients in a large soup pot, starting with chicken and ending with parsley. Fill with water to fully submerge the chicken.

Step Two: Bring to a boil over medium-high heat, reduce heat and simmer for 1-2 hours or until chicken is tender and cooked through and broth is flavorful.

Step Three: Remove chicken from pot and set aside.

Step Four: Set a large fine-mesh sieve over a large bowl and strain the broth. Remove carrots and set them aside. Smoosh all of the vegetables with a wooden spoon through the sieve to extract as much flavor as possible.

Step Five: Alternatively, use a stock sock or a nut bag or just a clean dish towel, add veggies to your preferred tool and squeeze the vegetables over the stock bowl to extract all the nutrients and flavor.

Step Six: Put soup together: shred chicken from bone and add to stock. Slice carrots and add to stock, Add Broth and chicken to individual soup bowls. Top with additional parsley.

How To Ensure Your Soup Broth Is Clear

One of the things we all love about a great chicken noodle soup is how clear the broth is. Transparent yet full of flavour! Theres a few tricks to the clear broth:

  • Simmer the chicken really gently. Harder boil gets the chicken jiggling around = murkier broth

  • Scoop the scum off the surface

  • Let the broth settle . Youll find that the bottom of the broth becomes darker as stuff settles on the base of the pot. Then gently pour the broth into the soup pot, leaving behind the darker broth that settled to the bottom of the pot

  • Dont brown the sautéed onion, carrots and celery. Brown veggies = brown broth!

  • Dont stir the pasta while it boils. That activates the starch in the pasta, making the broth cloudier.

1. Making a homemade soup from scratch does take some time but the end result is totally worth it. It’s not difficult at all to make and can be done on a Sunday afternoon while you go about some of your other household business. Don’t sit and watch the pot let it do it’s thing come back and check on it when you need to go about each step.

2. For this recipe, you’ll need to boil a whole chicken in a large stock pot covered in water for a few hours. Once the chicken is almost falling apart you remove it from the water and onto a cookie sheet or large plate. Then you can remove the meat from the chicken and place it back into the pot with the chicken stock.

3. As you cook the chicken soup, you may need to keep adding water to the pot as it evaporates with the steam.

4. The most important thing to remember when making a homemade chicken soup from scratch is to put those chicken leg bones back into your stock pot as you cook the soup with the rest of the veggies and meat. Before serving remove the chicken bones.

I did not grow up in a household where we made chicken soup from scratch, so the idea of plunking a whole, raw chicken in a pot of water and letting it simmer felt equal parts mystifying and nerve-wracking.

Why the whole chicken? Why not just shred a few cooked chicken thighs, pour in some flavorful bone broth, and call it good? And do you really leave the skin on?

Leah Koenig, author of Modern Jewish Cooking, coached me through my first time making this soup, and I will be eternally grateful. She describes the perfect chicken soup as clear goldene yoykh, or golden broth, as it is called in Yiddish.

You only achieve this by slowly simmering the chicken with the skin on along with some vegetables until the chicken literally falls off the bone. Strain the broth, chop up the chicken and vegetables, return everything to the pot, and you have the best chicken soup in all the land.

Chicken skin is key to this whole endeavor, Koenig told me. I fretted that it would make the soup greasy and overly rich, but she insisted: Keep the skin on to maximize your soups flavor. All of the savory, full-bodied oomph that you expect from a good chicken soup comes from the skin.

How To Make Chicken Noodle Soup From Scratch Step By Step Photos

Begin by dicing one onion and mincing three cloves of garlic. Place them in a large pot with 2 Tbsp olive oil and sauté over medium heat until the onions are soft and transparent.

While the onion and garlic are cooking, clean and slice 1/2 lb. carrots and 1/2 bunch celery . Add them to the pot. Continue to sauté the onions, carrots, and celery together. Youll only use half of a one-pound bag of carrots and half of a bunch of celery, but the rest doesnt need to go to waste. You can clean and slice the rest and freeze them to make another batch of soup later. I do it every time. It takes just a few more minutes and is super convenient later!

Remove the skin from two split chicken breasts . Split chicken breasts come with bones and rib meat, both of which add a LOT of flavor to the broth. They will also sometimes be labeled bone-in chicken breast with rib meat.

Add the chicken breasts to the pot along with 1 tsp dried basil, 1/2 tsp dried thyme, 1 Tbsp dried or fresh parsley, 1 bay leaf, and some freshly cracked black pepper.

Add eight cups of water, cover, and bring up to a boil over high heat. As soon as it reaches a boil, reduce the heat to low and let simmer for one hour. Make sure that you dont turn the heat down so low that it stops simmering. It needs to simmer the whole time.

After an hour, it will look something like this. Pull the chicken out of the pot

Use two forks to pull the chicken from the bone and shred it into bite-sized pieces.

The next day, remove the pot from the refrigerator and skim most but not all of the fat from the surface of the soup. Place a fine mesh strainer over a very large bowl or soup pot, and pour the soup through the strainer to strain out all the remaining solids. Refrigerate or freeze until ready to serve.
