You can’t rely on visual appearance when frying chicken as the coating will darken faster if your heat is too high, even if the inside still needs more time. For this reason, don’t try to rush the process: Set your temperatures as I describe, and keep that thermometer handy.

Copycat Kfc Fried Chicken Secret Recipe
KFC fried chicken is known all the world around. Yes, you can go to pick some up anytime you like at your local Kentucky Fried Chicken fast-food restaurant. But maybe you live away from one and want to make homemade KFC fried chicken. You can with this copycat recipe.
Note this copycat KFC fried chicken recipe is from the KFC leaked recipe featured in the Chicago Tribune. It is supposed to be the KFC original recipe from Colonel Sanders.
Is This The Real Herbs And Spices Recipe
The recipe was given to a Chicago Tribune reporter by Joe Ledington, Colonel Sanders’ nephew. He claimed that the recipe contains the original 11 herbs and spices he helped Colonel Sanders blend as a boy for the restaurants. However, after sharing the recipe, Ledington back peddled a bit and said he wasn’t absolutely sure if it was the same recipe that is so closely guarded at KFC headquarters today. But he did note the prevalence of white pepper.
Of course, KFC denies that this recipe is authentic however, would they admit it if it was real? The herbs and spices mixture is one of the best-kept fast food secrets, and KFC isn’t keen on letting the secret slip anytime soon.
While we may never know if Ledington’s recipe is correct, that won’t stop us from trying to recreate KFC’s fried chicken at home. Whether you try this recipe, or another copycat recipe , there are two things you can do to get Colonel Sanders-approved chicken: heavily coat the pieces in the spice mixture and use a pressure fryer.

How To Get Perfect Kfc
It helps to know how to cut up a whole chicken to get the right blend of thighs, legs and tenders. Then, coat the chicken as described above. Some insist that you should let the coated chicken sit before frying. Not at KFC. Their rule is from flour to fryer.
Bread your chicken by first dipping in an egg-milk wash then dipping in the secret spice blend mixed with two cups of flour. From there, go right into the fryer. If you allow the breading to sit on the chicken for too long, you might get soggy breading or breading that doesnt stick to the chicken.
When it comes to frying, KFC relies on high temp, industrial-strength pressure friers to get that extra crispy coating. While you wont be able at deep fry with your at home pressure cooker, you can still recreate the KFC crunch with a deep fryer, a Dutch oven or heavy-bottomed pot. Simply heat your oil 350ºF and leave each piece in for exactly 12 minutes. If youre worried about the chicken not being done, you can pop it into the oven for a few more minutes to heat it through .

Ledington’s uncle is the Colonel as in, the guy who came up with KFC’s original fried chicken recipe. You might call it marketing, but KFC has made a real thing out of how guarded a secret the recipe is, even going as far as to sue a couple that claimed to have found a handwritten copy of the recipe.
Ledington, 67, met withChicago Tribune writer Jay Jones at the Harland Sanders Cafe and Museum in Corbin, Kentucky, to talk about the newly restored restaurant there. Ledington brought along a family scrapbook and went through the pages reminiscing about his uncle.
Jones spotted handwriting on the back page of the will, and it seemed to list a recipe. He asked Ledington if this could be the recipe.

Here’s how the recipe read on the document:

Jones followed up with Yum! Brands, KFC’s parent company, to check on the veracity of this recipe. They didn’t confirm or deny, only saying, “Lots of people through the years have claimed to discover or figure out the secret recipe, but no one’s ever been right.”
Hmmmm, OK.

Is Kentucky Fried Chicken Gluten Free
There are some gluten free options at KFC, such as its green beans, corn on the cob, and uh a few dipping sauces.
So is KFC gluten free? Absolutely not if you’re craving fried chicken, biscuits, mac and cheese, or even some fries.
Nearly everything at this restaurant contains wheat , and cross-contamination is a major concern so if you are highly sensitive to gluten, it’s best that you just stay away.

Make Your Gluten Free Chicken Seasoning In Advance

There are a lot of great spices that make up my KFC seasoning recipe. Of course, it doesn’t take a lot of effort to mix spices, but because there are so many of them, it is a bit of a process.
To cut down on preparing gf fried chicken the next time the mood strikes, consider making a big batch of seasoning and storing it for later. That way, when the family is begging for chicken, you just have to pull the seasoning from the pantry and move right on to the next step.

How Do I Keep The Gluten Free Coating From Falling Off The Chicken
Here a few tips for keeping your flour mixture on the chicken and not the bottom of the fryer:
- After coating the chicken in the faux KFC fried chicken batter, be sure to let it sit for 30 minutes. This will allow the buttermilk mixture and seasoning to form a thick paste that will stick to your chicken.
- Don’t ovecrowd your fryer as the coating will fall off as the chicken pieces move against one another.

The Real Secret Ingredient
According to Ron Douglas, author of Americas Most Wanted Recipes, the real key to the perfect crispy texture is one thing: monosodium glutamate . You can add this into your seasoning mix before breading or sprinkle it on the chicken after frying. Regardless, its a must. And dont worryMSG isnt harmful to you in any way.
Choosing A Gluten Free Flour Mixture
Personally, I’ve not tried making this KFC recipe with anything other than my basic gum-free gluten free flour blend, which contains white rice flour, potato starch, and tapioca starch. That’s primarily because this blend has been absolutely perfect!
However, if you do want to try something else, I’ll caution you that you want to avoid any gums. This means that an all purpose flour won’t work believe me, you’ll have a gummy, mushy mess on your hands!

Thoughts On Kentucky Fried Chicken Recipe
i love the kfc recipe!!!
These comments have been transferred over from the earlier version of the site:
Frying Chicken
From being an expert on frying chicken I prefer to fry my chicken in a black cast iron skillet with vegetable oil rather than a few tablespoons of oil. I fry my chicken for 10 minutes on each side and it comes out perfect. I use about 3 inches of oil in the pan.
The Moroccan
Tried it now. The guidelines are the right ones. use your common sense and observations to make it perfect.
1 hour is too long. the juices would be gone. 15 minutes are enough.
Mid heat all along while covering the skillet, gave better results.
Use pepper and paprika generously.
After covering with flour mixture let the chicken rest for at least 15 minutes before frying. I made 3 bunches the last one was perfect.
Taste the flour mixture for the right amount of salt. etc etc
This recipe is one of the best coating mixes i have ever tried on Chicken wings. Ten minutes in the deep fat fryer and these things are amazing.
The only thing I tried was to mix the wings in a mixture of Dianah Chicken & Rib Sauce, and Thai Sweet Chilli Sauce . I let these sit in a warm oven before serving and I was lucky to get out with my hand when I put them out.

How Close Did We Get To Kfc Chicken

The first thing we noticed about our copycat fried chicken was the aroma it was absolutely intoxicating. All those herbs and spices activated in the hot fryer oil, and we could barely wait to let the chicken cool before taking a bite. We were pleasantly surprised that the combination of the 350 degree Fahrenheit oil and hot-holding the chicken in the oven created a crispy-on-the-outside exterior with a super juicy, perfectly moist interior.
When it came to flavor, we were pretty excited about how the chicken tasted. It was almost better than the original! The coating was lightly spicy and full-flavored, although it was a touch on the salty side at first bite. Finishing each piece with a sprinkle of MSG actually mellowed out the salt and boosted the umami-rich flavor. Our only complaint? Our chicken was ever so slightly less crispy than KFC’s. But, we don’t have a pressure fryer, so we can’t complain too much. Serve it up next to our KFC copycat coleslaw recipe, and you have a winner.
