Over one hour, depending on the size of your bird. This 4 pound bird took one hour and 20 minutes cooking time, then a resting time of 10 minutes to keep all of those juices in before slicing.

One of my favorite things about this simple roast chicken recipe is how little time it takes to prep. Its as easy as prepping the bird, seasoning, and putting it in the oven at a high enough temperature to roast. How To Make It

First off, preheat your oven to 425°F. Prepare the chicken by rinsing and drying it with paper towels. Drying is important because it will ensure a nice crisp skin.

Place carrots, potatoes, and onions on the bottom of a roasting dish. Add about half of the olive oil, salt, and pepper, tossing to combine.

Place the whole chicken on top of the carrots and potatoes, breast side up.

Drizzle the remaining olive oil over the chicken and sprinkle the chicken with remaining salt and pepper. Of course you can always add more or less salt and pepper. Place the lemon inside the cavity of the chicken.

Bake for 1 hour, 50 minutes, or until temperature registers 165°F when checked with an instant-read thermometer inserted between thigh and breast, not touching bone.

Remove the roasting pan from the oven and allow to rest for 10-15 minutes. This will result in the juiciest chicken.

Carve the chicken, and serve with potato, carrot slices, and pan juices. I like to garnish the chicken with fresh herb sprigs, like thyme and rosemary.

Equipment Needed For Roasting A Whole Chicken:

You can use a rack with an insert to roast your chicken, if you have one.

Or you can simply use a deep roasting pan or dish, like a 9x2x13 nonstick metal pan.

You can use a spoon to baste with or a turkey baster, both work just fine.

You do need some kitchen twine or string to be able to tie the drumsticks together. You can buy a spool at the grocery store or online. Or even ask your butcher to just cut you a 12-inch or so piece.

Thats it! So easy to make do with what you have in your kitchen.

Why does this work better than any other method? Well, let’s first take a look at some of the other “fixes” I’ve experimented with in the past:

Brining the bird by placing it in a salt water bath for a few hours helps a bit. It loosens up muscle fibers, allowing them to retain more moisture as they cook, and giving you a slightly expanded moist temperature range for the breasts.

The problem? Well, first off, it’s fussy. Secondly, it soaks the skin right through to the skin,* ruining its chances of attaining crispness . It also tends to dilute the flavor of the bird. Not so bad for robust turkey, but mild chicken needs all the flavor it can muster.

*Bonus points for anyone who can name that reference. Hint: classic 1960s comedy.

Salting the chicken is a better solution. It works much like brining does, but rather than use a water and salt solution, you instead rub salt directly onto the meat and and skin of the bird and let it rest uncovered in the fridge for a few hours .

Initially, the salt draws moisture out through the process of osmosis. It then dissolves in this liquid, creating a concentrated brine, which eventually gets reabsorbed. So you get the benefits of the brine, without watering down the flavor of the chicken. It also doesn’t saturate the skin the way a wet brine does. Sounds great, but it’s at best a buffer, keeping the breast meat a little moister, but still far from optimal.

How Long To Roast A Chicken

The important thing to note when cooking a large piece of meat is that the internal temperature is more important than what the recipe has down for cook time.

A roast chicken will require about 20-25 minutes per pound at 425 degrees F.

Lots of people roast chickens at a lower oven temperature, but Ive found that 425 results in a perfectly crispy and juicy chicken.

Can You Reheat Roasted Chicken

To reheat roasted chicken, place it in an oven safe dish and reheat in a 350 degree oven for about 25 minutes.

You can also reheat in a microwave on medium for 2-5 minutes.

How To Make A Whole Roasted Chicken In The Oven

Step One: Start by preheating the oven to 400 degrees.

Step Two: Next, make the herb butter mixture. Add the melted butter, garlic, lemon zest, fresh thyme, a generous pinch of salt, and freshly cracked pepper to a small mixing bowl. Stir everything together until well combined.

Step Three: Next, add the celery and carrots to a large cast iron skillet. Use a paper towel to pat the chicken dry on both the inside and outside and then place the chicken on top of the veggies, breast side up.

Step Four: Use your hands to rub the melted butter mixture under the skin of the chicken as well as inside the cavity, being sure to use all of the butter and cover every nook and cranny.

Step Five: Next, stuff the chicken cavity with the garlic, yellow onion, lemon, and fresh thyme. If you like, you can use a bit of kitchen twine to tie the drumsticks together and keep everything inside.

Step Six: Drizzle the olive oil over the skin of the chicken and then use a basting brush to ensure that the skin is well coated with oil. Then, liberally season the chicken with salt and fresh cracked black pepper.

Step Seven: Place the chicken in the oven, on the middle rack, and roast for an hour, at the thickest part, reaches 165 degrees. Use a large spoon or baster to baste the chicken with the drippings every 30 minutes.

  • Keeps the chicken moist! A 5-pound chicken cooks in a covered Dutch oven for about 1 hour and 15 minutes, so the chicken roasts in a moist environment for juicy and moist results.
  • Creates crispy skin without burning: As it cooks in the covered pot, the skin starts to brown without burning too fast. During the last 30 minutes, it roasts uncovered to attain that beautiful crispy and golden brown skin.
  • Even cooking: Dutch ovens retain heat evenly, so the chicken will cook properly throughout.
  • You can make a one-pot meal: Simply add a bed of vegetables, and dinner will be all set!

How To Carve A Roasted Chicken:

  • Once your chicken is cooked its time to carve it. You can either carve it at serving, or you can remove all the meat from the bones for later use.
  • If you look at the breast there is a line running down the center. Place a sharp knife just to one side of that line and press down firmly. Youll hear ribs crack. Do the same on the other side as well and youll be able to remove the center bone.
  • At this point youll be able to fold open the chicken and see exactly where your knife needs to go to remove the breast meat in one swoop. Cool, huh? Youll be able to remove all the chicken fairly quickly.
  • Now dont throw away the bones quite yet. Either put them in the fridge or freezer and use them to make homemade chicken stock.
