Chicken noodle soup is traditionally made using egg noodles. However, I very rarely use egg noodles because they lack any nutritional value. I personally prefer to use either whole wheat pasta or high protein pasta such as Barillas Protein Plus which offers a whopping 10g of protein and 4g of fiber.
If you are making gluten-free chicken noodle soup, there is also a huge selection of gluten-free pasta to choose from. Banza is a popular brand made from chickpeas which is gluten-free and full of 5g of fiber and 13g of protein!
If you are on a low-carb diet, you may want to order a brand called Fiber Gourmet Pasta which has over 6,000 5-star reviews on Amazon. However, my grandmas version took hours and hours. I dont have time to watch a boiling pot for half the day and this version is easy, ready in 30-minutes, and has all the comforting qualities you want in classic chicken noodle soup.
My family loved the homey, classic flavors in the soup, raved about it, and asked when Im making it again. It makes enough to stash half in the freezer for a rainy day or for winter cold and flu season. Chicken noodle soup is a miracle worker.

Similarly, it is incredibly easy to make, and it does not involve multiple steps to follow. After you prepare your chicken and veggies, add the broth to the pot, you just have to wait under 30 minutes for the soup to be ready.
Make sure to salt your soup to taste. We use low-sodium chicken broth and add salt as needed during the cooking process. However, you can substitute them, or even add additional veggies such as broccoli, zucchini, and bell peppers.
How To Store Leftover Soup
I love to double my chicken noodle soup recipe to have for now and then stored in the freezer. It will be the one soup everyone is raving about this winter season! It makes it perfect for warming up on the cold winter days or when I know someone is not feeling well.
- In the refrigerator: Follow the recipe and let cool completely. Once your chicken noodle soup is cooled, place in an airtight container and store in the refrigerator for 3 to 4 days. When reheating you may need to add in more broth.
- Can you make chicken noodle soup ahead of time? Yes! I love this recipe for that. Simply make and cook your chicken noodle soup. I like to leave out the noodles if I know I am making ahead of time. I even chop my vegetables thicken so they wont be mushy or too soft while cooking for a longer period of time. This is a great way to make it in a slow cooker too.
- Can you freeze chicken noodle soup? Yes, this chicken noodle soup will freeze well. Follow the directions making the chicken noodle soup except skip adding in the noodles. Allow the chicken noodle soup to cool completely. Place in a ziplock bag and lay flat in the freezer. Make sure that you label the bag with the date! When ready to warm up then you can thaw it overnight in the refrigerator. When you are ready to eat then you can reheat iton the stove or in the microwave and add in the noodles at this time. This will last in the freezer for about one month.

Can You Freeze Chicken Noodle Soup
Absolutely! Thats actually one of my favorite aspects of this soup. It makes a big batch, so I always freeze about half of it for those days when Im really under the weather. A quick reheat in the microwave or in a pot and this soup instantly makes me feel better. To freeze this soup, first divide it into single portions, make sure it is chilled completely in the refrigerator, then transfer it to the freezer, for up to about three months.

Begin by dicing one onion and mincing three cloves of garlic. Place them in a large pot with 2 Tbsp olive oil and sauté over medium heat until the onions are soft and transparent.
While the onion and garlic are cooking, clean and slice 1/2 lb. carrots and 1/2 bunch celery . Add them to the pot. Continue to sauté the onions, carrots, and celery together. Youll only use half of a one-pound bag of carrots and half of a bunch of celery, but the rest doesnt need to go to waste. You can clean and slice the rest and freeze them to make another batch of soup later. I do it every time. It takes just a few more minutes and is super convenient later!
Remove the skin from two split chicken breasts . Split chicken breasts come with bones and rib meat, both of which add a LOT of flavor to the broth. They will also sometimes be labeled bone-in chicken breast with rib meat.
Add the chicken breasts to the pot along with 1 tsp dried basil, 1/2 tsp dried thyme, 1 Tbsp dried or fresh parsley, 1 bay leaf, and some freshly cracked black pepper.
Add eight cups of water, cover, and bring up to a boil over high heat. As soon as it reaches a boil, reduce the heat to low and let simmer for one hour. Make sure that you dont turn the heat down so low that it stops simmering. It needs to simmer the whole time.
After an hour, it will look something like this. Pull the chicken out of the pot
Use two forks to pull the chicken from the bone and shred it into bite-sized pieces.
