In order to achieve juicy, flavorful meat, its important to cook chicken and any cut of meat by temperature. For dark meat chicken, such as chicken legs, an internal temperature of 175F is perfection.
As far as oven temperature is concerned, I like to set the oven to 350F. It is on the lower end for baking chicken, but I find it just right if you want to coat the drumsticks with a sweetened sauce such as my honey-dijon glaze or BBQ sauce.
At 350F, its high enough to cook the chicken but low enough so the sugars in the sauce wont burn but caramelize, lock in the juices, and give the chicken skin a flavorful crust.

Chicken thighs are the dark meat part of the chicken. Why is this?
All you need to do is look at the muscles a chicken uses most.
Chickens arent great at flying, hence the muscles they use most are their legs.
Muscles need lots of oxygen to operate.
Ill let the Chicken Farmers of Canada take over in explaining this :
Without getting too scientific, myoglobin is the hemoprotein responsible for giving dark meat its reddish colour. The more myoglobin, the darker the meat and the richer the nutrients. Myoglobin provides muscles with the oxygen they need during exercise or movement. Since chickens are flightless birds, they use their legs and thighs to get around, making them darker than the breast or wings.
So, the darker meat that is present in chicken thighs is a result of higher levels of proteins responsible for the everyday natural movements of a chicken.
What does any of this have to do with you, right now, cooking chicken thighs for tonights dinner?
Well, the higher levels of fats and proteins mean the meat will be denser than a chicken breast that has lower levels.
However, this is a good thing and is one of the reasons that chicken thighs are a favorite of teriyaki restaurants the world over.

How Long Do You Leave Chicken Thighs Out Before Grilling
When the chickens internal temperature reaches 165 degrees, it should be removed from the oven. Instead of using a meat thermometer, split open the thigh and check to see if the fluids run clear before cooking it. Allow for five minutes of resting time before serving the quarters. Chicken Temperature For White Meat
For the best-tasting white meat, which includes breasts and wings, you generally want to cook the meat to an internal temperature of 160°F. This temperature will continue to rise after removing the chicken from the heat, ideally to a temperature of about 165°. According to Morocco, the temperature of a whole cooked chicken can increase 10° at rest, so its best to pull it from the heat source at 155°. In smaller cuts, like a chicken breast, the heat will increase by only about 5°, so remove them from the heat source when they reach 160°. Build the rest time into your cooking routine use it to make a sauce or salad dressing.
Its important to consider what type of meat youre cooking: Is it bone-in? Boneless? A single chicken breast or a bunch of wings? So, how do you know for sure if your chicken is safe to eat? One word: temperature.

Juicy Baked Chicken Thighs
Ill admit that referring to this chicken thigh recipe as a baked chicken recipe is cheating a bit as Im starting the thighs on the stovetop first.
But youll see why in a second.
The best way to get chicken thighs with shatteringly crispy skin and juicy meat is by starting them on the stovetop in a cold pan, skin side down, and then finishing them in the oven.
When you start chicken thighs in a cold pan and then place the pan over medium to medium-high heat, you give the thighs a chance to render their fat and a lot of the moisture in that fat.
However, you still need to cook the rest of the chicken thigh as well, so after the skin of the thigh is sufficiently crispy, you will then transfer it to a pre-heated 450 degree Fahrenheit oven to finish cooking.
Ive found it takes around ten minutes for a bone-in chicken thigh to render its fat and produce a nice golden-brown skin when starting it in a cold pan over medium to medium-high heat.
At the ten-minute mark, you will then transfer the thigh to a 450-degree oven to finish cooking. This will take an additional 15 to 16 minutes.
It will take an 8-ounce bone-in chicken thigh 25 to 26 minutes to cook to an internal temperature of 180 to 185 degrees Fahrenheit using this method.

Cook The Chicken Legs
As mentioned above, chicken needs to be cooked to an internal temperature of at least 165°F for safe consumption. When cooking chicken breasts, oftentimes, the chicken becomes dry when cooked to a higher temperature.
However, that tends not to be the case with chicken legs. Cooking them to an internal temperature of 175°-185°F makes the meat more tender and less stringy.
Baking times and temperatures can vary by oven type. Convection ovens usually need to be set at a lower temperature than conventional ovens.
Cooking drumsticks at a higher temperature will give chicken legs a crispier skin than cooked at a lower temperature. Your preference will depend on cooking time and temp.
Just remember, the internal temperature needs to be at least 165°F! Here are some recommended cooking temps and times:
- Convection oven 350°F or conventional oven 375°F – cook for 45-50 minutes
- Convection oven 375°F or conventional oven 400°F – cook for 40-45 minutes
- Convection oven 400° or conventional oven 425°F – cook for 35-40 minutes

How To Season Chicken Legs
- Brush with butter. Brush the chicken legs on all sides with melted butter, or drizzle with olive oil or avocado oil if you prefer.
- Season the drumsticks. Sprinkle on the smoked paprika, garlic powder, sea salt, and black pepper.
TIP:You can season in the chicken in a large bowl if you prefer. Simply pour the melted butter over the chicken in the bowl, add the seasonings, and toss to coat.
How Long Does It Take To Bbq Drumsticks
Place the drumsticks on the grill and cook them for 30 to 35 minutes, flipping them over with a pair of barbecue tongs once every five minutes to prevent them from burning. You should use a meat thermometer and cook them until the internal temperature reaches 75 degrees Celsius in the thickest section of the drummer. This is the ideal cooking method.

How To Cook Stuffed Chicken
The USDA Meat and Poultry Hotline does not recommend buying a whole, uncooked stuffed chicken at the grocery store as it is highly perishable. It is also not recommended to pre-stuff whole chicken to cook at a later time.
According to the USDAs Food Safety and Inspection Service, if you choose to stuff chicken, do so immediately before cooking. If you do choose to stuff your chicken, cook any raw, perishable ingredients for the stuffing to decrease the risk of foodborne illness. The wet ingredients for the stuffing can be prepared ahead of time and kept refrigerated until used. But do not mix the wet and dry ingredients just until you are ready to spoon the stuffing mixture into the chicken cavity. Immediately cook the stuffed, raw chicken in an over that is set no lower than 325 degrees F.
How Long Does It Take To Bake Chicken Legs
Depending on the oven temperature and size of the chicken leg, it can take anywhere from 35 minutes to a full hour. Factors such as your oven running hot can also affect the time another reason to cook chicken by internal temperature and not time.

Youll also notice that all chicken legs come with the bone-in and skin-on. The bone adds about 15 minutes of cooking time, but for a delicious drumstick, its worth it.
Leaving the skin on is optional, but it does help lock in moisture and make each bite crispy and delicious. Removing it wont affect the cooking time and will only decrease the amount of fat, but you could do this after cooking.

Can You Cook Chicken At 160 Degrees
Preheat the oven to 160 degrees Celsius and gas 3. Butter a big roasting tray all over and put some butter on the skin of the chicken before roasting it. A Note About The Homemade Spice Mix
Chicken in general, including these baked chicken legs, need a lot of seasoning because on their own dont have a lot of flavor.
I dont necessarily like adding a lot of huge and big flavors to meat, especially if Im feeding kids . But, that doesnt mean this is an out for making gross chicken. I want this seasoning blend to come across as yum thats good and I dont know why instead of some random kid yelling why did you put garlic in this? and then storming off to their roomnot that this has ever happened at my house. Ha!
I purposely kept things neutral with my flavor profiles and Im not just talking about salt and pepper, though they definitely help. With enough of a hit of poultry seasoning, onion powder and paprika, the mixture works magically to produce really REALLY good chicken without anyone really knowing why. The cherry on top is the crispy skin you get from that rub down with olive oil. Its really so good.
