How To Make Crockpot White Chicken Chili
Start by adding chicken breasts, canned great northern beans, canned diced green chiles, fresh jalapenos that have been seeded and minced, garlic, shallot or onion, plus seasonings including salt, pepper, cumin, and dried oregano into a 6-quart Crock Pot.
Next add fresh lime juice plus chicken broth then stir, cover, and cook on low for 4 hours.
After four hours, shred the chicken and place into the refrigerator. Whisk together milk and gluten free flour in a small dish then pour into the chili and stir to combine. Cover and cook on high for 30 minutes. This will give the chili just a touch of velvety thickness.

I love this crockpot chicken chili because the broth is slightly thick and luxurious. Tips For Making White Chicken Chili
This white bean chicken chili has mild to medium kick, but you can make it spicier by using the jalapeno seeds or by adding more red chili flakes or cayenne pepper.
To save time, use a store-bought rotisserie chicken or leftover chicken that you have on hand. Of course, you can roast or pan sauté chicken if youre so inclined.
Make sure to salt your chili to taste. I use low-sodium chicken broth, low-sodium beans, and add a bit of salt to the chili so I can control the overall salt level. The saltiness of low-sodium broth, beans, rotisserie chickens, and personal preferences for salt all vary so salt to taste.

I prefer my white chicken chili to be fairly thick. To achieve this, I blend about 1 cup of the cannellini beans in a food processor to make a bean paste of sorts. This gets added to the white chili to make it even heartier.
For a super thick chili, let it simmer uncovered for longer than the recipe calls for.

I like to use rotisserie chicken in a lot of dishes, and this recipe is no exception.
When you bring your chicken home, let it cool slightly before breaking everything down.
Doing this while the bird is still warm will make it so much easier and hassle-free when you need it.
When the time comes, pull out the amount you need, chop it up and add it to the pot.
As mentioned above, if using pre-cooked chicken, you can make this white chicken chili on the stovetop.
Get everything going and add the chicken to warm through. Since youre not cooking it, your chili will be ready to go in around 15-20 minutes.

White Chicken Chili Recipe Tips
This dish is super simple to make and straightforward. However, here are some tips to help along the way.
- Cook the Chicken First and Season How Youd Like. I typically season it with a generous amount of sea salt, freshly ground black pepper, and a dash or two of cumin.
- Shred or Dice the Chicken. Ive used both methods but personally prefer the texture of shredded chicken. Simply use two forks to shred.
- Add Creaminess by pureeing 1 cup of beans and ¼ cup of broth. If you dont have a food processor or blender you can simply use a fork to mash the beans.
- Want to make it vegetarian? Add an additional can of beans in place of the chicken
- Need it to be dairy-free? You can completely eliminate the yogurt. It may not be as creamy but will still be delicious.
- Top the dish with yogurt instead of sour cream. Use yogurt as a topping by adding a spoonful to the chili when served.
- Serve with homemade tortillas. Try these easy to make, delicious homemade flour tortillas.
- Kick up the spiciness by using hot green chilies and/or adding more green chilies.
- Prefer less spicy? Use less than the 7 oz of chilies the recipe calls for or completely eliminate.
- For a quicker meal cook the chicken the night before and add to the chili the next day.
Toppings For White Chicken Chili
One of the best parts of this chili, I think, is how it invites variety, depending on the garnishes you use to top it with.
Sour cream? Oh, yes, please! A pinch of red pepper flakes. Chopped cilantro, sliced hot chiles. Crunchy tortilla strips. Shredded cheese.
I have this chili all the time even in the summer and my favorite way to serve the chili is to add a big spoonful of mango peach salsa on top, followed by some sour cream and lots of shredded sharp cheddar cheese.
That salsa omg the slight sweetness of the mango is absolutely perfect with this chili!
Its all good whatever you and fam are in the mood for.
And of course, its hard to be grumpy about the ease of a rotisserie chicken.
This is the kind of meal you can decide upon at the last minute, pick up the ingredients at the grocery store on your way home from work , and still have time to get everything on the table.
Quick note about the serving size: if youre feeding a hungry family, double the beans, and up the chicken broth to a full quart . The recipe as written feeds four as a side , or two or three as the star of the meal in a hefty bowl.

How To Thicken White Chicken Chili
My secret to rich and thick white chicken chili is to blend part of the beans with an immersion blender prior to serving
If you dont have an immersion blender, you can place a few ladlefuls in a food processor or blender .
- Chicken Stock. To better control the seasoning, I always opt for reduced-sodium chicken stock for soup and chili recipes .
Variations Of This Recipe

- Protein swap try making this chili with leftover shredded turkey!
- Extra protein try adding a can of black beans, just make sure you drain and rinse them, or they can turn your chili an odd color.
- Add heat for a spicier chili, try using the hot variety of green chiles, and/or add some diced jalapeno to the slow cooker.
- Non-Dairy you can enjoy this chili without adding the cream cheese and half and half.
A lot of creamy white chicken chili recipes dont have corn in them, but I added some here because the subtle sweetness goes really well with the heat level from the green chiles.

Guys, the toppings are the real secret here. Most chili is delicious, but what makes a chili recipe over the top good are really yummy toppings. So you have to do them all!
I layer as follows: a thick layer of shredded sharp cheddar cheese, a dollop of yogurt, sliced avocados, then sprinkle on lots of fresh cilantro and green onions too.
And lastly, I love beer bread on the side for dipping, its a chili must. For a second I contemplated using tortilla chips instead. But this just needs a good simple slice of warm homemade beer bread. Its delish.

Premaking Storing And Reheating White Chicken Chili
- Freezer meal You can make this recipe into a freezer meal by placing raw ingredients into a freezer ziplock bag, freeze for up to 3 months. Thaw and cook when you are ready. Keep the cilantro and sour cream seperate and add that after cooking when shedding the chicken.
- Storing This recipe after cooking doesnt freeze well for the cream will seperate after being thawed. Though, it will last 3 days in the fridge in an airtight container.
- Reheating The best way to reheat this is on a pan on the stove top, dont over cook or the sour cream may seperate. Or you can cook in the microwave, but again dont overheat!
